Rip it off the DVD then compress it, probably the best option. You'd need one good peice of software or a variety though I'm not sure what you'd want to use.

Retail DVDs are usually encrypted so AnyDVD is a must-have software to decrypt your DVD.

Then use CloneDVD Mobile to put it on ure iPod.

CloneDVD is pretty good for DVD backups too.
